Another weekend... another baking session!
I actually made this last weekend and they went down so well that I've been asked to make them again, and have literally just got the next batch out of the oven.
It's a really lovely recipe for Caramel Apple bread that I came across recently on Pinterest.
Although its called 'bread', its definitely more 'cake' like, and served up with lots of custard or ice cream, what could be better, yum!

The recipe over on Domestic Rebels blog is for one/ two large loaves but I decided to make four little ones instead, the choice is yours!
(I pretty much followed the original recipe (link above) but as I tweaked it a bit, here are my directions...)
* Preheat oven to gas mark 4 and line your loaf tin/s with baking paper
(the ingredients will make either one normal size loaf or four small ones)
*Cream together the butter and sugar in a large bowl and then add the bicarbonate of soda, eggs and vanilla and beat until combined
* Add the sifted flour and salt to the batter and lastly, the chopped apples
* In a small bowl, combine the ingredients for the crumb mixture and set aside
* Spread half the batter mixture into the bottom of the loaf tin and then sprinkle half of the crumb mixture and finish with a dollop of caramel. Repeat this again, finishing with the caramel so you get lovely yummy layers...
* Bake it for around an hour or until a knife inserted comes out clean
* Leave to cool on a wire rack
* Enjoy!
