Caramel apple bread...


Another weekend... another baking session!
I actually made this last weekend and they went down so well that I've been asked to make them again, and have literally just got the next batch out of the oven.

It's a really lovely recipe for Caramel Apple bread that I came across recently on Pinterest.
Although its called 'bread', its definitely more 'cake' like, and served up with lots of custard or ice cream, what could be better, yum!

The recipe over on Domestic Rebels blog is for one/ two large loaves but I decided to make four little ones instead, the choice is yours!




(I pretty much followed the original recipe (link above) but as I tweaked it a bit, here are my directions...)

* Preheat oven to gas mark 4 and line your loaf tin/s with baking paper
(the ingredients will make either one normal size loaf or four small ones)

*Cream together the butter and sugar in a large bowl and then add the bicarbonate of soda, eggs and vanilla and beat until combined

* Add the sifted flour and salt to the batter and lastly, the chopped apples

* In a small bowl, combine the ingredients for the crumb mixture and set aside

* Spread half the batter mixture into the bottom of the loaf tin and then sprinkle half of the crumb mixture and finish with a dollop of caramel. Repeat this again, finishing with the caramel so you get lovely yummy layers...

* Bake it for around an hour or until a knife inserted comes out clean

* Leave to cool on a wire rack

* Enjoy!

Three lovely things... {in the kitchen}

It's Friday!
New blog feature!
Yay!

I wanted to start a simple, regular feature that would bring together a selection of all the things I'm really liking right now, and from week to week

Colour crush...

Well, we've probably not got much of a summer left now, and seeing as we're already starting to see all the new AW collections hitting the stores and even the Christmas shop in Selfridges in London is open... (gasp!) I thought I'd make the most of the sunshiny days still to come and do a nice bright and colourful colour crush post for you today, hope you like it!

Maple pecan granola...

Happy Monday everyone!
I thought I'd do a little post today on a lovely granola recipe I discovered recently...
If you're anything like me, you'll be amazed at the amount of sugar found in shop bought granolas and how high up those bloomin' ingredients list it features, ggrrr!
I pretty much followed the recipe to the letter but as it says, you can mix it up a little and change the nuts if you're not keen on pecans (as if!) , or add some dried mixed fruits, etc...

I had some sprinkled over natural yoghurt with a few blueberries, and it was yum yum indeedy!

Bread and butter pudding...

I made this bread and butter pudding the other day when my folks were over for dinner, and it went down a treat (apart from with the boy who decided to declare his hatred towards blueberries...honestly).

Anyway, as you know the normal recipe for bread and butter pudding contains sultanas but I used blueberries instead and covered my helping with cream and got stuck in, nom nom!
I kind of followed two recipes for this, the original recipes can be found here and here.
I couldn't resist using a bit of maple syrup too... (addicted much!)

I love how it ended up looking like a little parcel all wrapped up...

Cherries cherries cherries!

I've been snacking on a lot of cherries lately in one form or another...
You probably saw my recent post on those super rich chocolate brownies with little cherry jewels hidden inside, mmm...
I think it goes back to when i was little and my Dad used to buy 
brown paper bags of them from our local market.
I loved nothing more than nibbling on them as he passed them to me after picking out the stone, 
bless him!

I couldn't resist taking a quick snap of these little cherry jewels, all washed and ready to nibble on.

I also thought whilst we're on the subject, I'd do a little recipe round up of things cherry related.
